I woke up this morning in a nice toasty room and the world's best foot-warmer at my feet (aka Bingley). It was one of those mornings where all you had to do was look outside and you knew that it would be miserable to walk out the door into the freezing cold - snuggling up with a cup of coffee sounded so much better. Well, life on the farm doesn't work that way - there are dogs and the kitty to feed, chickens and ducks to let out of the coops, and then our latest addition - a horse that we have to ride each day. The kitty tried to get into my room 3 times, and when that failed, she tried to get though the back door another gazillion times - she didn't even want to be outside.
After the first round of chores, I decided to make some butternut squash fries for lunch. It required going out to the garden to get some fresh rosemary, but Bingley and I braved the cold one last time.... or so I thought. I was really wanting to skip the horseback riding today, but Cappie had other plans. Her pasture is next to our garden, and as soon as she saw me walk out the front door, she bolted to the fence and wouldn't stop saying "hello" and staring at me as if to say "you're coming NOW, right?".
How could I say "no" to that face?????
Well, Cappie ended up getting her way, and I spent a lovely afternoon riding as well as getting a gallon of dirt off of her. I'm not sure who was the dirtiest - Cappie before the brushing, or me *after* brushing all the dirt onto myself.
The fries were A.M.A.Z.I.N.G. by the way! I just cut up a butternut squash, sprinkled it wish salt, oil and rosemary, and put it in a 450* oven for 30-45 min.
When I was serving up the fries, I noticed Kitty "eyeing" me through the window..... she eventually made it inside and received her daily serving of milk. What can I say? Our animals are spoiled :)
Happy Wednesday!
